Ingredients:
- 4 cups of chopped kale leaves
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, diced
- 1/4 cup of red onion, finely chopped
- 1/4 cup of Kalamata olives, pitted and sliced
- 1/4 cup of feta cheese, crumbled
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
Wash and dry the kale leaves
Remove the tough stems and chop the leaves into bite-sized pieces
In a large salad bowl, combine the chopped kale, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese
In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing
Drizzle the dressing over the salad ingredients in the bowl
Toss the salad gently to coat all the ingredients with the dressing
Let the salad sit for a few minutes to allow the flavors to meld together
Serve the Mediterranean kale salad immediately or refrigerate for later
