Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ripe nectarines, sliced
- Maple syrup, for serving
Instructions:
The rolled oats should be pulsed in a blender until they become like coarse flour
Mix the brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg with the all-purpose flour in a large bowl
Melt the butter and add the egg and vanilla extract to a different bowl
Use a whisk to mix the ingredients together
Add the wet ingredients to the dry ones and mix them together just until they are mixed
It's okay if there are some lumps in the batter; don't mix it too much
Add a little cooking spray or butter to a griddle or nonstick skillet and heat it up over medium-high heat
For each pancake, put 1/4 cup of pancake batter on the griddle
On top of each pancake, put two or three slices of nectarine
The pancakes are done when the top starts to bubble and the edges begin to look set, which should take about two to three minutes
After you flip the pancakes, cook them for another minute or two, or until they are golden brown and fully cooked
Take the pancakes off the griddle and keep them warm while you cook the rest of the batter and the slices of nectarine
