Easy Spring Pasta with Lemon Sauce



This Easy Spring Pasta with Lemon Sauce is a delicious dish that is full of fresh flavors and perfect for the season. Toss tender pasta with bright cherry tomatoes, crunchy asparagus, and a sour lemon sauce to make a quick and easy meal that is light and refreshing.

Ingredients:

  • 8 oz pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions:

Cook pasta according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and cook until fragrant, about 1 minute

Add cherry tomatoes and asparagus to the skillet

Cook until tomatoes start to soften and asparagus is tender-crisp, about 5 minutes

Stir in cooked pasta, chopped parsley, and grated Parmesan cheese

Toss to combine

Season with salt and pepper to taste

Add lemon zest and lemon juice, toss again to coat everything evenly

Remove from heat and serve hot

Garnish with additional Parmesan cheese and parsley if desired
