Orange Vanilla Bean Cupcakes



These Orange Vanilla Bean Cupcakes are a delightful blend of citrusy orange flavor and the rich aroma of vanilla beans. Perfect for any occasion!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • Seeds from 1 vanilla bean
  • Zest from 2 oranges
  • 1/2 cup fresh orange juice
  • 1/2 cup whole milk

Instructions:

Warm up the oven to 350F 175C and put paper liners in a cupcake pan

Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk

Put away

Melt the butter and mix it with the sugar in a different large bowl

Beat them together until they are light and fluffy

One egg at a time, making sure to mix well after each addition

After that, add the orange zest, vanilla bean seeds, and vanilla extract and mix well

In a small bowl, mix the whole milk and fresh orange juice

Mix the dry ingredients and orange juice mixture slowly into the butter and sugar mixture, switching between the two as you go

Mix the dry ingredients in last, then the wet ones, until they are just barely combined

Fill each cupcake liner about two thirds of the way to the top with batter

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down

After the cupcakes have cooled, you can frost them and decorate them however you like

Perfect Cappuccino

Ingredients:

  • 1 shot of espresso
  • 1/3 cup of steamed milk
  • 1/3 cup of milk foam

Instructions:

Brew a shot of espresso using your espresso machine

Steam 1/3 cup of milk until it's hot but not boiling

Froth 1/3 cup of milk until it forms a creamy foam

Pour the espresso into a coffee cup

Add the steamed milk to the espresso

Top it off with a dollop of milk foam

Vegan No-Chicken Nuggets



As an alternative to regular chicken nuggets, these Vegan No-Chicken Nuggets taste great and don't hurt animals. They are made with healthy wheat gluten and tasty seasonings, and the outside is crispy while the inside is soft. Great for a filling plant-based meal!

Ingredients:

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs

Instructions:

Preheat oven to 375F 190C

In a mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, and salt

In a separate bowl, whisk together vegetable broth, soy sauce, and olive oil

Pour wet ingredients into the dry ingredients and mix until well combined and forms a dough

Divide dough into small nugget-sized pieces and roll each piece into breadcrumbs, coating evenly

Place coated nuggets on a baking sheet lined with parchment paper

Bake for 20-25 minutes, flipping halfway through, until nuggets are golden and crispy

Serve hot with your favorite dipping sauce

Spiced Oatmeal Buttermilk Pancakes with Nectarines



A tasty change from regular pancakes are these Spiced Oatmeal Buttermilk Pancakes with Nectarines. The warm spices and rolled oats give it a cozy texture and taste, while the sweet and juicy nectarines make it taste different and refreshing. Great for a special brunch or breakfast!

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ripe nectarines, sliced
  • Maple syrup, for serving

Instructions:

The rolled oats should be pulsed in a blender until they become like coarse flour

Mix the brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg with the all-purpose flour in a large bowl

Melt the butter and add the egg and vanilla extract to a different bowl

Use a whisk to mix the ingredients together

Add the wet ingredients to the dry ones and mix them together just until they are mixed

It's okay if there are some lumps in the batter; don't mix it too much

Add a little cooking spray or butter to a griddle or nonstick skillet and heat it up over medium-high heat

For each pancake, put 1/4 cup of pancake batter on the griddle

On top of each pancake, put two or three slices of nectarine

The pancakes are done when the top starts to bubble and the edges begin to look set, which should take about two to three minutes

After you flip the pancakes, cook them for another minute or two, or until they are golden brown and fully cooked

Take the pancakes off the griddle and keep them warm while you cook the rest of the batter and the slices of nectarine
